LOUKANIKA – GREEK SAUSAGE WITH ORANGE PEEL AND A HINT OF OUZO

For July’s 5 Star Makeover we have to pick a classic Greek meze and make it our own.

LOUKANIKA - GREEK SAUSAGE WITH ORANGE PEEL AND OUZO 015

Everyone that knows me, knows my love of Greek food and my years involved in promoting and hosting at a Greek restaurant in Midtown-Manhattan.  I said so long, but the love of this cuisine stayed with me.

I decided to make one of my favorites:  Greek sausage with orange peel sans casing. Also, I wanted to serve it with a bit of sweetness and decided on a compote of pears and fennel.

LOUKANIKA - GREEK SAUSAGE WITH ORANGE PEEL AND OUZO 019

Ingredients:

Compote:

3 pears cut into cubes
1 medium size fennel, sliced
1/4 sugar
1/4 water
2 cinnamon sticks
2 star anise
3 tablespoons ouzo

cook covered over medium heat until fruit is tender.

Sausage:  adapted from Food.com

2 lbs ground pork and 1/2 lb of pork fat (my butcher took care of this)
rind of 1 orange (pith removed) cut in small pieces and grated skin of half an orange
4 garlic cloves crushed
3 tablespoons minced parsley
2 tablespoons Greek oregano
2-3 teaspoons salt
2 teaspoons anise seeds
2 teaspoons ground coriander
1 1/2 teaspoons ground allspice
2  teaspoon pepper
3-4 tablespoons ouzo

Combine all ingredients.  Shape with plastic wrap and refrigerate for a few hours or overnight.

Remove from wrapping and grill.

  1. You sausage looks wonderful and ot intimidating to make since there is no casing 🙂 Love the orange peel and ouzo in there. The compote is a great final touch.

    anise and orange is a great flavour combo and I really like the idea of it in this sausage,, paired with a boozed up compote too! Will be giving this a go!

  19. This is a must make for me. I got the sausage attachment for the Kitchenaid and love making sausage… it takes a little practice but the result is fantastic. I am fussy about “happy pork” (well-raised) and like the idea of making my own sausage for that reason most of all… well, and taste! This is a must make for me. Great recipe!!

    I must say that I’ve had very limited exposure to Greek food, but this sausage looks and sounds divine. The combination of fruits, spices and pork has to be incredible. Love this one, Norma.
