This month on the 5 Star Foodie Makeover, hosted by Lazaro of Lazaro Cooks! and Natasha of 5 Star Foodie is Chilled soup.
This is a such and easy soup to make, but packed with flavor.
Ingredients:
1/4 stick of butter
2 shallots, chopped
3 large carrots, cut into one inch pieces
3 medium size sweet potatoes, cut into one inch squares
1/8 teaspoon nutmeg
white pepper and salt to taste
64 ounces of chicken stock
Instructions:
Melt the butter in a large, heavy-bottomed pot over medium-high heat. Add the chopped shallots and sauté for about 5 minutes.
Add carrots, sweet potatoes, chicken stock, salt, pepper and nutmeg then bring to boil. Reduce heat and simmer uncovered until carrots and sweet potatoes are tender, about 30 minutes.
Working in batches, purée soup in blender until smooth.
Chill soup. Before serving you can add yogurt or as I did left over lobster, chives and basil flowers.

I think it’s brilliant to use the fall veggies in the chilled soup – that’s a concept of makeover at its best! Love it!
Can I say how much I love the presentation? That blue glass is perfect for the soup. One of my favorites for anytime of year is a spicy carrot. Never thought of adding sweet potatoes and I am hitting my head going DUH when I see this recipe. Love the basil flowers and lobster addition too. Great dish!
This is very elegant. Such a beautiful color, and I love the garnishes. The flowers are so pretty, and that big hunk of lobster claw is calling to me!

Buttery, creamy and sweet, such a flavorful soup and the fact that it’s cold and not hot makes it perfect for warm weather days. I think your garnish is beautiful in its simplicity, just love it!
