April’s Creative Cooking Crew’s challenge was to make a sandwich using the letters BLT…not the norm; bacon, lettuce and tomato. I decided on going Mediterranean and letting my guest build their own.
This was a fun challenge and I was able to use so many fresh ingredients.
Marinated lamb overnight with yogurt, oregano, red pepper, nutmeg, garlic, cinnamon, mint, salt /pepper, then grilled.
For tabbouleh:
I used equal parts of parsley and mint, 1/3 cup bulgur wheat, tomatoes, cucumbers, scallions, lemon juice, virgin olive oil and my touch, fresh herbs.
Buttermilk-tahini dressing adapted from Kalyn’s Kitchen.
Husband and friend, Ines approved.
BUEN PROVECHO!
No soy amante al cordero pero esta receta se ve esprctacular. Creo que le daré otra opprtunidad al cordero preparando esta receta!!!

YUM YUM YUM i love Middle Eastern food, this looks so fresh and colourful and gorgeous! And MAN, could I go for a little lamby sammie just about now! I too make a tahini dressing but I use yogurt and lemon! Well done Mizz Norma!
You are so sweet and so funny….thanks
I have been stumped on this one. I must say you knocked it out of the park. A lot of the combos I thought of made me sick and I’ve been struggling. This is not my favorite challenge, but now you are inspiring me. I might think about your sandwich all week long
With the warm weather it reminds me that tabboulleh is my favourite salad for picnics. Love you version of BLT.
I definitely approve. The Lamb was tender, juicy, crispy & flavorful. The tabbouleh was very refreshing, the flavors of mint & parsley gave it a kick along with the Tahini sauce. A summer dish. Good thing Phil arrived when he did, I almost ate it all……F A B U L O S O!!!!
A fantastic meal! So fresh and flavourful.
It looks amazing, Norma! I love the combination of those ingredients! Great flavors!

Norma, I just ordered my first half of fresh organic lamb-to be ready in six weeks. I’ve bookmarked this recipe and simply can’t wait to try. The flavors are bursting off the photos.
I love that you went Mediterranean with this challenge! I also love the build-your-own concept. Definitely an awesome twist on a BLT 🙂
Although BLT is one of my favorites, I could definitely change my mind with this baby. HOw I love the lamb and vegetable salad combination. It is a brilliant twist on a classic… love what you did.
