June’s Creative Cooking Crew Challenge was to create a triple-decker sandwich with at least three ingredients using the same letter of the alphabet.
I came up with the letter “E”.
Egg-Edamame salad: 4 eggs, 1/2 cup of edamame, crème freiche, grain mustard, salt/pepper to taste.
Eggplant: sliced length wise then brush with olive oil and grill. After grilling add some crushed garlic and season with salt/pepper.
Escarole: massage with olive oil and salt ( I used Spanish paprika salt) and a sliced tomato to that layer.
I will be leaving for Dublin on the 17th and will be back after the 26th. See you in July and…
Looks fabulous and very creative fillings. I’d sure like to try it.
That’s a sandwich. The massaged escarole and eggplant sound amazing together!
This was a fun challenge Norma!! Good job with the letter “E”.
SUPERB!! My Veggie friends said “OUT OF THIS WORLD, CAN’T WAIT TO TASTE IT” my mouth is salivating….
I wish it was interactive so that I can just GRAB IT…..
Bless those hands Girl!!!! lol
Very creative! Nothing like a good sandwich. Nice presentation.
What a beauty! It looks incredibly mouthwatering.
I’ll have that to go and don’t forget my pickles
Que curioso reto pero te ha salido un sandwich espectacular y muy provocativo, saludos…

This is the first time I’ve seen edamame in a sandwich, blended with egg sounds awesome.

Amazing sandwich and you went with 4 Es 🙂 Love it all but especially the edamame choice.
Three decks and more! GREG
This looks like a wonderful summer sandwich! 🙂
looks very delicious!
We’ve only lately been able to find edamame here in SMA (frozen from a nearby Costco), so I don’t have any real experience with them. This looks wonderful, though–perfect for summer.
