Now that I am partly settled and have gotten back to getting my “casa” in order I was longing for something healthy and easy to make.
If you have a Trader Joe’s in your neighborhood, please buy their Harvest Grains. It’s a pound of little gems…Israeli style couscous, spinach, tomato and egg orzo, baby garbanzo beans (chick peas) and red quinoa. If not available, you can make your own blend.
There is really no recipe for this. You follow the cooking instructions on the package. I used chicken broth instead of water.
My avocado was ready, creamy and buttery. I added grape tomatoes, a few scallions, kalamata olives, a sprig of thyme, a pinch of fresh rosemary, small garlic clove, juice of 1/2 a lemon, a couple of teaspoons of virgin olive oil and salt/pepper to taste. Also, mint and basil from my one pot garden in my apartment.
This was refreshing, delicious and quite healthy.

And this is why we need a Trader Joe’s down here. Next time I’m around one I’ll bring a year’s supply of those grains. I’m in awe at the baby garbanzo beans.

Norma, I’ve never seen anything like those little gems, but what a delightful mix! I’m amazed they all cook in the same time, and I’d love to lay my hands on some baby chickpeas.. 🙂
Must.have.harvest.grains!!! That dish looks phenomenal. Admittedly, I’m not a huge fan of avocado, but I bet I’d love the filling inside a red pepper, for example. Love this, Norma!

This is really creative! I had never seen it….and I LOVE avocado!!
I don’t use avocado often, not because I don’t love it, it’s just hard to find good ones here. And I normally cave and whip up guac. This looks amazing and far healthier that eating the mounds of chips I eat with my guacamole.
