Tonight we are having a few friends for dinner to celebrate the birthday of my friend, Felicia. Instead of gifts we often give a dinner party for the birthday person. It’s a chance to show how much they mean to us.
This dish was really supposed to be Espadon de Mémés Toulonnaises which is sword fish. Sent my husband shopping and he brings home cod. I had no idea how to correctly translate it so I e-mailed a great blogger and now friend, Cristina, whose blog I find is really one to follow…From Buenos Aires to Paris….thank you Cristina for your immediate reply. I just love this blogging world of ours.
Tonight we are going to Toulon in southern France which is located in the Provence-Alpes-Côte-d’Azur region. Dishes cooked with mussels and tomatoes are generally given the appellation toulonnaise.

Ingredients:
2 large pieces of cod, about 2-3 lbs in total (seasoned with salt and pepper)
1/4 cup olive oil
12 cup dry white wine
4-5 large tomatoes, peeled, seeded and coarsely chopped
about 20 white mushrooms, cleaned and quartered lengthwise
12 shallots
2-3 fresh thyme sprigs
12 fresh tarragon leaves, chopped
salt and pepper to taste
30 mussels, scrubbed and de-bearded
4 tablespoons chopped fresh Italian parsley
large roasting pan
Instructions:
In a deep frying pan over medium heat, warm the olive oil. Add the shallots until slightly cooked, about 3-4 minutes and add wine. After a few more minutes add your tomatoes, mushrooms, thyme, tarragon, salt and pepper. Bring to a boil and add the mussels. Shake pan and turn off heat.
Meanwhile, take some of the sauce and coat roasting pan. Add the fish and pour sauce over fish. Bake in a preheated 350 degree oven for about 20 minutes or until mussels open and fish is flaky.
Serve immediately.
We also served, minted pea soup, braised vegeable and pumpkin flan.

I had a wonderful time and the cod was absolutely amazing!!! the pea soup with mint… heavenly and the flan… the pumpkin flan… no comments!!!!! off the charts.
