This month Laz and Joan of the Creative Cooking Crew decided on choosing 4 items to be incorporated in a dish. They were Granny Smith apples, vinegar, nut butter and bacon.
Took me a while to come up with this idea and was injured while preparing it. Using my mandolin I sliced the apples and my hand.
OUCH!
Ingredients for corn pudding:(adapted from Taste of Home Magazine)
1/2 cup butter, softened
1/2 cup sugar
2 eggs
1 cup (8 oz sour cream – I used 1/2 sour-1/2 yogurt)
1 package (8-1/2 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) creamed style corn
6 strips of bacon cooked and chopped
Preparation:
In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in sour cream. Gradually add muffin mix alternately with milk. Fold in corn and bacon.
Pour into a cookie sheet (as shown) and bake at 350 degrees until set and golden…about 45 minutes.
Assembly:
Nine slices of Granny Smith apples grilled and then brushed with reduced fig vinegar for glazing. Plate three apple slices, cut pudding and place atop apples. Do this twice and finish with three more apple slices.
Pistachio Butter: In your Cuisineart put 1/2 cup of shelled pistachios, juice of half lemon and two tablespoons of butter and pulse until smooth. Shape into quenelles.
BUEN PROVECHO!
Very creative that’s for sure Norma. We had better watch those mandolins. I sliced my finger once, learned my lesson and am pretty leery every since.
Thanks Val…I know they are scarry…
Mi amiga Norma es un genio!!!! (aunque se corte con la mandolina) Esta riquisimo!!
Gracias Cristina…you made me laugh!
Very creative in concept and presentation. I bet delicious too!
Tj=hanks Joan..it was husband approved.
What a fun use of the ingredients, Norma! I love corn pudding and this is so creative!
Thanks Faith. i will get to your post soon. just trying to recoup from the cut and also the fall..its had for me to type. The corn pudding was really delicous with the addition of the bacon.
Mandolins are dangerous! My friend nicked her finger the other day – although I think we were distracting her too much from slicing some batata chips. The napoleons are super creative!
A little heads up… I gave Platanos & Mangoes a shout-out over at NBC Latino. They asked which were my favorite Latino bloggers and I had to mention you. 😉
Adriana…how very sweet of you…but that is you…Thank you!
Ouch! That must be hurting…at least the napoleon has turned out amazing!
Thnak you Angie…you are always so supportive….
Great idea, i have 2 cans of creamed corn in my Pantry – now I know what to do with them…
Superb Norma!!!!
Read well one can of creamed corn and one can of corn kernels…amiguita!
You took this is such an unexpected direction. Love! It’s elegant and homey at same time with that corn pudding.
It was really tasty…I want your pizza.
Very cute idea and looks delicious! I swear I cut myself everytime I use my mandolin. We have a love hate relationship!
I have been usin my mandolin for so many years and now I am scared of it.
Now this is surely a dessert to be reckoned with! I love how inventive it is!
What a great creation! This dessert is really original and must taste divine.
Cheers,
Rosa
That is why I am always scare with the mandolin, it cuts better than a knife and is so easy to be injured. Take care Norma…!!!
The mandolin and immersion blender are the two most dangerous tools in the kitchen. I’m really sorry you hurt yourself. However, you bleed for a good cause :-). This sounds delicious and it is the most creative thing I’ve seen today. I hope your weekend is off to a good start. Blessings…Mary
NOrma, you are just so creative. What a fun dish. So original and interesting.
Great job, Mama. Your presentations are getting better and better. Bravo!
Thanks Laz…I am trying and I enjoy being part of this crew.
Very creative and unique Norma! I wish I was there to help you taste test! Hope your cut is healing quickly!
Thanks Reeni…I am much better…and it was really good!
I was really intrigued by this dish because it was so unique. Plus, I’m a lover of corn grits, polenta, corn bread, so I’m certain that this tastes as good as it looks. Besides, corn is great to pair with bacon and apples, the apples are sweet like the corn but with the added acid and tartness. Good job, girl, hope your hand is healing up okay?
Much better thanks. I really enjoyed the corn and you are right abiut the bacon.
Norma I am super impressed, it is just gorgeous and really creative. LOVE the pistachio butter too. Hope you are healing well!
Thanks so much!
hope your hand is feeling better! such a creative and gorgeous take on the challenge ingredients! i’m especially in love with that pistachio butter, the touch of lemon was inspired!
Thank you Seth

That’s exactly what happened to me the first time I used a mandoline… ouch is right. And it bleeds a lot! I am better with it now but really should spend the $35 to buy one of those mesh gloves for using it… I keep meaning to.
Lovely dish, worth a little blood. I love pistachio butter. When I made a pistachio cream sauce I was in heaven. I need to try this… love corn pudding too!
Going to look for the glove..it is worth it…thanks for stopping by
Love this dish, Norma! I hope your hand is better!
I’ll use my mandolin with care. It looks wonderful – with the tart apple, and fruity figs. Hope your hand is better
