NAPOLEON – SWEET CORN PUDDING WITH BACON, FIG VINEGAR, GRILLED GLAZED GRANNY SMITH APPLES AND PISTACHIO BUTTER QUENELLES

This month Laz and Joan of the Creative Cooking Crew decided on choosing 4 items to be incorporated in a dish.  They were Granny Smith apples, vinegar, nut butter and bacon.

Took me a while to come up with this idea and was injured while preparing it.  Using my mandolin I sliced the apples and my hand.

Ingredients for corn pudding:(adapted from Taste of Home Magazine)

1/2 cup butter, softened
1/2 cup sugar
2 eggs
1 cup (8 oz sour cream – I used 1/2 sour-1/2 yogurt)
1 package (8-1/2 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) creamed style corn
6 strips of bacon cooked and chopped

Preparation:

In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in sour cream. Gradually add muffin mix alternately with milk. Fold in corn and bacon.

Pour into a cookie sheet (as shown) and bake at 350 degrees until set and golden…about 45 minutes.

Assembly:

Nine slices of Granny Smith apples grilled and then brushed with reduced fig vinegar for glazing. Plate three apple slices, cut pudding and place atop apples. Do this twice and finish with three more apple slices.

Pistachio Butter: In your Cuisineart put 1/2 cup of shelled pistachios, juice of half lemon and two tablespoons of butter and pulse until smooth. Shape into quenelles.

    Very creative that’s for sure Norma. We had better watch those mandolins. I sliced my finger once, learned my lesson and am pretty leery every since.

  5. Mandolins are dangerous! My friend nicked her finger the other day – although I think we were distracting her too much from slicing some batata chips. The napoleons are super creative!

  13. The mandolin and immersion blender are the two most dangerous tools in the kitchen. I’m really sorry you hurt yourself. However, you bleed for a good cause :-). This sounds delicious and it is the most creative thing I’ve seen today. I hope your weekend is off to a good start. Blessings…Mary

  17. I was really intrigued by this dish because it was so unique. Plus, I’m a lover of corn grits, polenta, corn bread, so I’m certain that this tastes as good as it looks. Besides, corn is great to pair with bacon and apples, the apples are sweet like the corn but with the added acid and tartness. Good job, girl, hope your hand is healing up okay?

  21. That’s exactly what happened to me the first time I used a mandoline… ouch is right. And it bleeds a lot! I am better with it now but really should spend the $35 to buy one of those mesh gloves for using it… I keep meaning to.

    Lovely dish, worth a little blood. I love pistachio butter. When I made a pistachio cream sauce I was in heaven. I need to try this… love corn pudding too!
