Braised Italian Sweet Sausage with Balsamic – Glazed Onions and Grapes

Who knew that grapes and sausages are a classic Italian pairing?

Looking through a breakfast magazine, I came across this recipe.  You see my husband brings home the bacon sausages every other Saturday after golf, along with a dozen other Italian delicacies.

Adapted from Breakfast for Dinner, Fine Cooking Magazine.

Ingredients:

3 tbsp. of olive oil ( i used one as sausages render their own fat)

8 links sweet Italian sausage (about 2 pounds – I had 7) pricked with a fork

1 large onion, thinly sliced

1/2 cup of chicken broth

2 tbsp. balsamic vinegar or to taste

20 seedless red grapes, cut in half

2 tbsp. chopped fresh oregano ( I had greek dry oregano)

Salt to taste

Instructions:

In a large skillet, heat oil until shimmering.  Add the sausages and cook until brown all over.  Transfer to a large plate.

Add the onions to the skillet and, sprinkle with salt and cook, stirring occasionally, until onion soften and they start to caramelize.  Add the chicken broth and vinegar scraping the bottom of skillet to incorporate the brown bits.  Reduce to a gentle simmer.  Add the sausages and grapes and cook until sausages are done.  You can check by cutting one in half.

Note:  I was not happy with the grapes.  They lost their color .  If you make this dish add the grapes a few minutes before serving.

I must say that this combination was quite tasty.

    Noooo, you’re killing me with this post, Norma! I love Italian sausages, and it has been so long since I’ve eaten them. Can you believe that in Argentina, in spite of all the Italian-influenced cuisine, there are no Italian sausages?! We have amazing chorizos, but they’re spiced completely differently. Your version with grapes sounds super tasty.

      And the Argentine ‘chorizo’ is spiced totally different than the Spanish chorizo. Anyone know the predominant spice in Argentine sausages?

        Hi Joan,

        My father-in-law occasionally makes homemade chorizo. Of course, this type of recipe varies from person to person and region to region, but most chorizos here include the following ingredients: salt, black pepper, paprika (small amount), ají molido (small amount), garlic and white wine. Some people also add bay leaf, oregano and/or nutmeg, but these spices aren’t the major players. Most Argentine chorizos are made from 100% pork, but some are a mix of pork and beef. Chorizo colorado, which is redder and bit spicier, usually has large amounts of paprika and/or ají molido.

    • Katie Joan wants to know the predominat spice in Argentine sausage….You can probably make your own sausages whith all the right ingrediens…I love the fennel in them

        The fennel in Italian sausages gives them such a wonderful flavor! I’m totally jonesing for a sausage and peppers sandwich. 😉

  7. Yes, this is a great dish. I once made a sausage and muscadine grapes. If you ever come across those, you must give it a try.
